Arepas start with a grilled “pocket” made from white or yellow corn (which is naturally gluten free!). Pockets have a crunchy exterior and a soft center. Fillings are also all gluten-free and include shredded beef, baked pork, and shredded chicken. All the fillings are seasoned with traditionally Venezuelan “sofrito” which is a mix of onions, red pepper, garlic and some fresh herbs. Black beans, fried plantains, and a variety of cheeses can be added as toppings. Lastly, a fresh Avocado or Garlic salsa are great for drizzling or dunking! A popular style area is the Queen – which is similar to a chicken salad.
